Nutrition, Food & Dietetics Program

The Nutrition, Food & Dietetics (NUFD) Program provides high quality experiential learning to diverse Sacramento State Students so that they become empowered professionals in their community who lead disease prevention, sustainability, food access and health promotion for individuals, families and communities.

The NUFD program offers options for students intereste in pursuing nutrition, food, dietetics or health related careers.

BS Degree in Nutrition & Food (NUFD)

The BS Degree in Nutrition and Food prepares students for careers in the field of nutrition, food management, community nutrition, and food sustainability. The program emphasizes the role of nutrition and food in individual and family health, cultural and behavioral influences on food selection, and the management of commercial and noncommercial food systems.

The Didactic Program in Dietetics meets requirements that prepare students to become a Registered Dietitian Nutritionist (RDN), as well as a variety of careers in clinical nutrition, community nutrition, private practice, food service administration, and food science.

This program is accredited by the Accreditation Council for Education in Nutrition and Dietetics of the Academy of Nutrition and Dietetics. A verification of DPD completion establishes eligibility for a Dietetic Internship and examination for becoming a Diet Technician Registered or RDN.

This is a post-baccalaureate, 42 week internship that currently accepts 10 students annually. The program provides full-time supervised practice at a variety of healthcare and community facilities with emphasis on disease prevention and public policy.

The minor in Nutrition and Food provides students an understanding of the role food and nutrition play in health and disease prevention through coursework in:

  • food safety,
  • cultural foods,
  • nutrition & wellness, and
  • metabolism
  • and elective options in:

  • life-cycle nutrition,
  • sports nutrition, and
  • current nutrition controversies.
  • The minor could be a relevant addition to any major and is particularly well-suited towards students pursuing careers in public health, gerontology, psychology, human development, health science, education, medicine, nursing, and other healthcare professions.

    Certificate in Grocery Management

    A certificate in Grocery management will provide you with grocery management competencies related to: food safety, grocery procurement and merchandising, human health and well-being, and marketing/human resource management. Concurrently students will gain industry experience through a corporate internship.

    MS in Nutrition & Food

    The Sacramento State Master of Science in Nutrition and Food program prepares students for leadership and advocacy in nutrition programs and policy. The 30-unit program includes specialized coursework in the science, community and behavioral aspects, and government policy of nutrition alongside an array of interdisciplinary electives tailored to students' interests and career goals.


    Food Science And Human Nutrition

    When you apply for the master's degree program in food science and human nutrition at UW, you indicate the research experience you want and faculty member you're interested in working with. Our graduate program faculty are actively conducting research in the areas of eating behaviors, indigenous/traditional diets, micronutrient needs and deficiencies, food product development, sensory characteristics of food products, health and physical performance of active individuals, nutrition and disease, brain-reward pathway, microbial diagnostics, rumen microbiome, nitrogen/protein metabolism, lipid analysis and alternative feed/forages.

    As part of a university that has been epically innovative since 1886, we are making amazing discoveries to impact food production, disease prevention and public health. The world needs more relentless curiosity. Research experiences in food science and human nutrition are readily available.

    You can earn your master's degree in food science and human nutrition through the Department of Animal Science or Family and Consumer Sciences. You also have an interdisciplinary program option, which adds a theory component to your laboratory and classroom learning.

    Graduate students who earn their M.S. In food science and human nutrition find jobs in clinical, community and research settings. They have also been accepted into professional education and doctoral degree programs across the United States in fields such as human medicine and health care.

    Human nutrition and food science jobs include research, food product development, quality control, marketing, management, sales, advertising, public relations, regulation, food microbiology, health and wellness, public health and community nutrition, college teaching and extension work.

    If you enter the food science and human nutrition graduate program as Registered Dietitian (RD) or pursue an RD after earning your master's degree, you'll have even more opportunities for human nutrition and food science jobs in fields such as inpatient care, nutrition counseling and sports nutrition.

    As a graduate student in UW's food science and human nutrition master's program, you'll have access to modern facilities with major lab instrumentation, including metabolic cart, DEXA and nutrient composition analysis technology.     The Department of Kinesiology, Nutrition, and Health offers three undergraduate majors that lead to a Bachelor of Science in Kinesiology, Nutrition, and Health. They include public health, kinesiology, and nutrition.

    Our graduates have made an impact as leaders in health, nutrition, and sport careers – and in some instances as professional athletes. A combination of dynamic classroom and experiential learning engages students to understand the physical, metabolic, organizational, societal, and cultural forces that affect health and performance.

    Accreditation and Certification

    Accreditation and certification provide assurance to students and prospective employers that our professional degree programs meet the highest standards. Three programs offered by the Department of Kinesiology, Nutrition, and Health (KNH), Athletic Training, Dietetics, and Kinesiology are accredited by their respective professional organizations.

    Graduates of KNH's athletic training and dietetics programs are eligible to apply for professional certification. This requires passing a national exam and in the case of dietetics also fulfilling a professional internship following graduation.

    Accredited Programs

    *As nationally mandated by the Commission on Accreditation of Athletic Training Education (CAATE), the professional athletic training program at Miami University transitioned from the Bachelor's level to the Master's level. Students wishing to pursue athletic training should enroll in the Bachelor of Science in Kinesiology program with the intention of applying to the Master of Athletic Training program during junior year.
