Recipe: Grilled Asian Peach Beef Short Ribs - Houston Chronicle

For a peachy twist on an Asian favorite, these thin ribs make for a quick cook that will blow you away with flavor.

2 tablespoons kosher salt

1 tablespoon coarse-ground black pepper

1 teaspoon ground ginger

½ cup peach jam

Instructions: Heat grill to medium heat (300-350 degrees) on an indirect setting with half the lit coals on one side, or half the burners on a gas grill ignited.

Combine the salt, pepper and ginger and apply all of it the ribs, rubbing it all over. Allow to rest for 10 minutes at room temperature.

Place ribs on the cool side of the grill and cook for 5 minutes on each side with the lid closed. After that, flip and brush on the peach jam to meaty side, and cook for 5 minutes. Flip, brush on the jam and cook for an additional 5 minutes.

They can be served immediately.
